No offense to the summer squash lovers out there, but quite frankly, I find zucchini a bit boring. Not that boring is necessarily a bad thing. Boring is what makes Zucchini so versatile. From soups to desserts, the common garden variety zucchini has the ability to morph into practically anything we want.

It’s Sunday morning in Bergen County and the sun is shining, the birds are singing and the breeze is blowing. What a beautiful day for a visit to the Ramsey Farmers’ Market, now in its 2nd year. One of the things I like most about the Ramsey Farmers Market is the live music. Each week they have music by different local bands. On the day I was there, 15 year old, Matt Roy, was playing his guitar and singing. I stopped and listened while he sang a couple of good Springsteen songs, then started on my quest to find the best fruits and veggies to make dinner for my family, especially my vegan daughter who was coming home from a music festival weekend.

I have to confess it took me 45 years to tackle the tomatillo only to find out that they are really very easy to work with. I don’t know why I was so intimitated by those little green tomato looking things with the wrinkled, papery skin, but I am
no longer afraid. Actually, now I’m addicted. The original recipe for this salsa comes from Marcela Valladolid‘s Fresh Mexico Cookbook. I met Marcela and took home her cookbook after a Food Network sponsored house party last year. It’s taken me this long to post about it, unfortunately, especially since I now have a new favorite condiment.

I just made this dip for a dinner party we’re going to and I had to write it down before it was forgotten. Back in May of 2008 I posted a recipe for butternut squash dip that I had found online which was pretty good, but I knew I could do better. The addition of the fresh sage is critical. The added goat cheese gives it a nice tang without overpowering the butternut squash and the anchovy fillets give it a depth of flavor without anyone ever guessing there’s little fishies in there. Give this a try, you will wow your guests, I promise.

I have to admit something to you. I am a potato salad flunky. Yes, it’s true. I’ve only attempted to make potato salad a handful of times for good reason. My version always ends up more like mashed potatoes than anything close to traditional potato salad. Until now.
