Beet Recipes: Flank Steak with Horseradish Beets

roasted beetsOh what to do with all those ruby beauties being plucked from the earth right here in our own backyard.  It wasn’t that long ago that I hated beets.  I’m not sure when or how I crossed over to being a fan.  Maybe it was the addicting Golden Beet salad with Goat Cheese served at the Shipwreck in Brielle (I guess I was the only one addicted to it because they took it off the menu and I will never forgive them.)

Marinades: Best results for Beef, Chicken and Pork from America’s Test Kitchen

flank-steakA recent article in my all time favorite cooking magazine, Cook’s Illustrated, busted the Myths of Marinades and dished out some very tasty recipe suggestions for Chicken, Beef and Pork.  I have already tried two out of the three and was thrilled with the results.

Southwestern Steak Salad

Here’s a simple salad that is great for the winter when ripe tomatoes are no where to be found. It’s also a great way to stretch a steak. You can use whatever steak is on sale or that you prefer. This time around we used Shell Steaks. Flank steak would be great, even London Broil sliced nice and thin. And of course, you can switch out the beef for chicken if you’re looking to cut the fat.

Sunday Leftovers = Pot Roast Enchiladas

On Saturday night, I made my very first Pot Roast. I know, I know. How could I have never made a Pot Roast before? Well, to be honest, when you’re searching for “Food with Attitude” Pot Roast just doesn’t jump to the top of the list. And, to be really honest, it probably won’t be on my list of “have to haves” any time soon. In my opinion, pretty boring.

Grilled Flank Steak with Simple but Tasty Marinade

This recipe comes from The South Beach Diet cookbook believe it or not and is one of my favorite marinades for Flank Steak. I know there are a thousand recipes for Flank Steak out there, but this one is so foolproof, I rarely deviate. It’s also super easy. »» Grilled Flank Steak with Simple but Tasty Marinade

Lamb Burgers: Try this delicious alternative to boring burgers

I had to get this recipe up the very next day because it is absolutely delicious. If you’re a lamb lover, this is a great way to get your lamb fix without breaking the bank. The rolls are a new find that I was so excited to discover. I try to avoid bread as much as possible, but every once in a while I like a good burger, roll and all. Now, I can have my roll and eat it too. They’re called Arnold Select Sandwich Thins. I bought the mulit-grain variety. I also saw whole wheat. 100 calories each.

Tapas Time

So, I guess it was last Wednesday when I decided I wanted to have some company and put together a little Tapas menu. Now, for those of you who have yet to hear of Tapas, basically, they are a wide variety of Spanish appetizers. Truth be told, its just a trendy way to say “Cocktail Party” these days. I’ve been to one Tapas bar in my life. It was (is) never sure how long places last in Philidelphia. Peter and I absolutely cannot remember the name of the place. But, we ordered a Tapas for two, basically a smörgåsbord (did you ever have to spell that word?) We had no idea what each dish was as they came out so the bartender would kindly explain each one. The number of dishes never seemed to end.

Chocolate Lamb Chili

This is one tasty bowl of chili. If you like lamb, you will love this recipe. It’s the first time I’ve used cocoa powder in a chili recipe but I plan to do it more in the future. It gives the dish a beautiful dark color and rich flavor. I didn’t really taste a chocolate flavor at all but Peter said he could taste it. So, you’ll just have to try it and find out for yourself. I used Stone Smoked Porter for the beer but any smoky beer would do.

Chili Beef Stew

Yesterday was a cold and windy day in New Jersey. Just the type of day for a pot of stew simmering all day on the stove. As usual, I really didn’t have a plan, so I did a random search on Google and came up with zillions of stew recipes. I wasn’t in the mood for the traditional beef with potatoes and carrots, etc., so the idea of a Chili flavored beef stew was intriguing to me. I have to say it was “okay.” I’m going to try tweaking it in the future. Actually, I did some tweaking to the original recipe already. I added one more tablespoon of chili powder, a teaspoon of ground cumin and a can of black beans. I also omitted the corn which the original recipe called for. So here it is. If you have any suggestions for future tweaks, I’d love to hear them. I served the “stew” over rice.
