One of the wonderful perks of living at the Jersey Shore is the abundance of fresh fish available right off the boats. I still find it amazing though that so many of us “locals” have no idea what is fresh caught and what comes to us from other areas of the US or further. This healthy chili recipe is a Jersey Bites original. When I’m creating a recipe, rarely do I hit a home run the first time out, but this time, home run city. This recipe is hearty and delicious and very healthy. I was worried about the escarole but it turned out to be the perfect addition. We ate big steaming bowls of it around our fire pit last night with guests. Everyone loved it. There’s absolutely no need for any garnishes either. Browning the meat takes a little extra time, but I think its worth it. You could even do that the night before if you don’t have time in the morning. I hope you’ll try this recipe and come back to leave your comments. And, I have to give photo credits to my 8 year old. Crockpot dishes are not very photogenic. I think he did a great job.

Oh what to do with all those ruby beauties being plucked from the earth right here in our own backyard. It wasn’t that long ago that I hated beets. I’m not sure when or how I crossed over to being a fan. Maybe it was the addicting Golden Beet salad with Goat Cheese served at the Shipwreck in Brielle (I guess I was the only one addicted to it because they took it off the menu and I will never forgive them.)
