Every day, in the early morning hours, Fred Glasgow hand selects all of the fresh fish and seafood he’ll bring back to stock his recently-opened Medford Seafood Market. “We want to make sure we are offering the freshest fish available,” said Fred’s wife and business partner, Toni Glasgow.
The new Medford Seafood Market is a seafood lover’s dream. On any given day fresh, high quality familiar fishes like flounder, tilapia, cod and haddock can be found along with specialty fish including sushi-grade yellow fin tuna, Chilean sea bass, Scottish salmon, Hawaiian butterfish and bronzini, a European sea bass.

We’re always pleased here at Jersey Bites when we catch wind of new Jersey-based food products. It does our Jersey hearts good to see local businesses grow and prosper.

Everywhere you look today, there are articles, food products, and talk of eating gluten free. More and more people are discovering that they have gluten intolerance and are eliminating or greatly limiting the foods they eat containing wheat. Luckily, I have no problem with gluten-loaded foods, and I am the first to grab a bagel or muffin to go along with my morning coffee. But every once in a while I cook up a batch of Breakfast Quinoa when I am feeling the need for a different sort of hot breakfast.

One of the wonderful perks of living at the Jersey Shore is the abundance of fresh fish available right off the boats. I still find it amazing though that so many of us “locals” have no idea what is fresh caught and what comes to us from other areas of the US or further. The next time you go to buy fish, be sure to ask them what is fresh AND locally caught. For a list of the local fish and their seasons, take a look at ShoreCatch.com.

This healthy chili recipe is a Jersey Bites original. When I’m creating a recipe, rarely do I hit a home run the first time out, but this time, home run city. This recipe is hearty and delicious and very healthy. I was worried about the escarole but it turned out to be the perfect addition. We ate big steaming bowls of it around our fire pit last night with guests. Everyone loved it. There’s absolutely no need for any garnishes either. Browning the meat takes a little extra time, but I think its worth it. You could even do that the night before if you don’t have time in the morning. I hope you’ll try this recipe and come back to leave your comments. And, I have to give photo credits to my 8 year old. Crockpot dishes are not very photogenic. I think he did a great job.

Oh what to do with all those ruby beauties being plucked from the earth right here in our own backyard. It wasn’t that long ago that I hated beets. I’m not sure when or how I crossed over to being a fan. Maybe it was the addicting Golden Beet salad with Goat Cheese served at the Shipwreck in Brielle (I guess I was the only one addicted to it because they took it off the menu and I will never forgive them.)
