After my Blogger party last week, I had a ton of smoked salmon still in the fridge, so I went in search of a recipe that incorporates some nice spring veggies and my lovely smoked salmon. This is the first of two I will be posting. Tonight I will be concocting a pasta dish with asparagus, fresh peas and smoked salmon. Then that’s it for smoked salmon for a while. (I promise, family.)

If you’re looking for a last minute addition to your Easter Sunday menu, we have the perfect cupcakes to foot the bill. I first discovered these cupcakes when they were the cover picture of the April ‘08 issue of Bon Appétit magazine. My sister and I made them together for our family’s Easter dinner and they were a hit. My grandfather ate four before my grandmother finally told him, “Enough with the cupcakes!” (He found them before we actually ate dinner, mind you).

Yesterday, I talked about making an Easter Pie for the first time. As you can see, the end result was picture perfect. Unfortunately, it was a very sweet version of this traditional Italian dish and I was not a happy bunny.

One of the worst things about life after divorce is Holidays. The every other year arrangement really makes it hard to develop traditions, and I happen to enjoy traditions especially where food is involved. This Easter my kids are with Dad for Easter Dinner, so Easter Sunday will become Easter Saturday in my house. I really hope the Easter Bunny doesn’t get thrown off by our playing with the days like this.
