Healthy Chili: Butternut Squash Crockpot Chili

turkey sausage, chicken and butternut squash chiliThis healthy chili recipe is a Jersey Bites original.  When I’m creating a recipe, rarely do I hit a home run the first time out, but this time, home run city.   This recipe is hearty and delicious and very healthy.  I was worried about the escarole but it turned out to be the perfect addition.  We ate big steaming bowls of it around our fire pit last night with guests.  Everyone loved it.  There’s absolutely no need for any garnishes either.  Browning the meat takes a little extra time, but I think its worth it.   You could even do that the night before if you don’t have time in the morning.  I hope you’ll try this recipe and come back to leave your comments.  And, I have to give photo credits to my 8 year old.   Crockpot dishes are not very photogenic.  I think he did a great job.

Crockpot Pork Tenderloin with Sage, Rosemary and Cannellini Beans

While I was getting my economy induced gray hairs artfully erased from my delicate dome last week, I came across this recipe in Family Circle Magazine. (When you start going gray you must start reading Family Circle. It’s written somewhere, I’m sure of it.)

Crockpot Chicken Lettuce Wraps

The end of January is when I start to lose my taste for “winter food.” I’ve had my fill of chilies and stews and all things heavy and homey. (Plus I wouldn’t mind losing a few Holiday LBs.)

Sweet and Sour Meatballs

Last night I made a quick an easy hors d’oeuvre for our New Year’s Eve party. Since the last guests didn’t leave until after 2am, I am living a very lazy day on the couch. This recipe is perfect for the lazy cook, complete with the frozen meatballs from Costco.

Crockpot Eggplant Parmesan and a Sausage Cheese Dip

Friday was a gray, rainy day here in Jersey, so I wanted to fire up the crockpot and warm up the house with some yummy smells. In need of some new recipes, I was browsing around on the web when I stumbled upon the King of all Crockpot blogs, A Year of Crockpotting.

Chicken, Butternut Squash and Cabbage Soup

Here’s a great recipe for a chilly Hallow’s Eve. In my little town by the shore, we go all out on Halloween. There is one street in particular that looks like Mardi gras, sans the drunk naked people. (We save that for home. ;)

Turkey, Butternut Squash Crockpot Chili

This is a hearty and healthy slow cooker recipe. Say “Yes” to seconds, no resolution problems here. The ingredients will sound a little strange but the end result is delicious and oh so satisfying on a cold Winter day in good old Jersey. 31 degrees today. Man winter bites, except for the food of course. Oh, the original recipe is from this month’s Better Homes and Gardens. I have doubled the turkey and the squash because I didn’t think there was enough in the original.
