Fabulous Swordfish MarinadeI’m posting this to the blog so I never have to worry about forgetting or losing it again. It is as described, fabulous. This recipe comes from CDKitchen.com. I highly recommend the site.
1 tablespoon finely chopped shallots At least two hours before you are ready to grill the swordfish, put the shallots, red wine, orange juice and oil in a mixing bowl and blend well. Add the swordfish pieces and coat well with the marinade. Cover and refrigerate. Grill swordfish approximately 5 minutes on each side. I serve this with Harry & Davids Onion Relish or Costco’s Mango Salsa.
