Tilapia with Salsa Sauce


Here is one of the easiest and tastiest recipes for Tilapia I know. After a long Labor Day weekend of every type of red meat imaginable, my system was crying for something a bit lighter. The recipe originally called for Monterey Jack cheese, but I find grated Parmesan much tastier. Last night I didn’t have enough Parm, so I through in Feta also, and it was just as good. The type of Salsa doesn’t matter, just try to drain some liquid if its real watery. I used Costco’s Mango Salsa with Peach and it was outstanding. Ok, so here it is.

4 Tilapia Fillets (I buy a bag of frozen Tilapia tenderloins at Costco. They defrost in minutes and are very good.)
1/4 Cup Salsa
2 Tablespoons Mayo
1/4 Cup Shredded Parmesan
1/2 teaspoon pepper

Mix all ingredients and top each fillet. You can place fillets in a foil lined sheet pan or any oven safe baking dish. You might want to spray with a little Pam before laying the fish down.
Bake at 425 degrees for 20 minutes.

I serve this with rice and a salad usually.

    Love it! Easy to make and one of the boys had a second serving! I highly recommend it as a tasty dish.
    My tilapia looked very orange though, not pretty like yours. Any suggestions?

    Love it! Very easy and the kids thought it was TASTY! I served it with rice and salad, very good ideas. I highly recommend this as a weeknight dinner. Total time from start to finish, 30 minutes!

    Yep, because it happened to me the other night and I know why now. In posting the recipe I put “grated” parmesan cheese. You really need to use the shredded parm or pecorino romano. It won’t turn out orange, even though the grated tastes fine, it is prettier with the shredded.

    This was good. I used freshly shredded romano cheese and it was orange too. That’s ok though. Next time I’ll put it under the broiler to brown it up before I serve it. Yum. Thanks for the recipe. I’ll make it again.

    Not bad at all! Hubby said he enjoyed it. He typically likes more seasoning on everything so I added lemon pepper seasoning, sea salt and pepper to the fish before coating the salsa mixture. Also, I add a splash of cumin to the salsa mixture for an extra kick. Very well done. Thanks for the recipe!
